Great book
This really is a sauce encyclopaedia. It has so much information and if you’re into food it is really interesting to read into some of the techniques but some of it could take you about a week to make a nice sauce, which is excessive for the home cook!

book is great, loads of great info but there is knowledge far above this. to process this it will take a lot of time so i am keeping it

Though lacking in the amazing photos of 'cooking' and 'baking' this book does not lack for beautiful recipes and really interesting facts/history with how a sauce started/where it was originally from. As usual, everything I have made so far from James Peterson's books turns out delicious every time! And excellent teacher, and a must for anyone who wants to up their game
