Will it work for fruit 'jello'?

I am not sure. I use it for vegan cheese making, and it is certainly not firm enough for jello how I use it. I am pretty sure agar agar could get firm enough though.

What is the shelf life of this product? Can it be stored in the freezer?

The shelf life is indefinite if stored properly. It should not be stored in the freezer. It should be resealed in the pouch that it came in with as little air as possible in the bag. And kept at room temperature in a dry place.

What's the difference between this company's Kappa carrageenan and their Iota carrageenan?

Hi Barbara, Kappa produces a harder and more brittle gel and Iota a softer, more elastic gel.

I don't have a definitive answer but (1) ingredient listed on package say Kappa Carrageenan only (2) there is a web address on the package where you might find the answer...www.modernistpantry.com.
