I'm a working mother to a 3 year old and a husband who eats like one. I wanted to start making fast, easy dinners that were healthy so I purchased this book. The pros are that the recipes are really very simple and quick recipes and don't require a ton of preparation or shopping. My family also liked almost everything I've made from the book.The con is that most of the recipes use exactly the same thing (canned green beans, no fat franks and a cream of x soup), so there isn't that much variety. My husband jokes about what I"m going to do with the green beans every night. I've had the book for a month, made 10 of the recipes and frankly, I'm already sick of it. There are only so many ways to mix soup and beans together before the family starts getting sick of it. But shame on me for only having this cookbook.Finally, I find it really hard to believe that these meals are that healthy given all of the ingredients are processed foods. That said, you have to pick your battles - it makes cooking much simpler to mix a bunch of ingredients from cans and boxes together, instead of using fresh ingredients.

***I love this book!!***
This is absolutely my favorite cookbook!! When I was trying to diet, I was always left feeling hungry and I hated doing without dessert. So of course my diets would fail.I happened to see Joanna Lund's cooking program on tv and decided it was worth trying one of her books. My husband and I love every recipe I have tried!! The best part of all is I feel satisfied and full when I eat, and I have lost 9 lbs since buying this book 7 weeks ago. I have bought several more of her cookbooks recently and love them too. Joanna Lund cookbooks are the only ones I will use now. I highly recommend this book!!

Real food for real people - don't tell them its healthy!
After my husband had a heart attack in October - we had to radically change our way of eating. I saw really fast that I had to come up with something other than chicken and broccoli! At a cardiac rehab education class, another wife mentioned she used the cookbooks by Joanna Lund. Having nothing but a hungry husband to lose, I ordered one and was pleasantly surprised that not only did she use ingredients that I have in my kitchen, the results were tasty, filling and did not look HEALTHY! ( A sure way to chase my husband out of the kitchen!) EAch recipe is broken down by calories, fat grams, sodium and most diet exchange program needs. Fantastic aid for anyone who is realigning their diets for any reason!

Just what the doctor ordered!
A rare cookbook: simple, healthy recipes, tasty but not for gourmets. I also have Lund's book "Cooking Healthy with a Food Processor," and both books share nutritional summaries for each recipe, valuable for Weight Watchers and Diabetics. Introductory chapters of a general nature are equally valuable. In this book Lund shows how to substitute low-fat, low-calorie ingredients for otherwise high-calorie ingredients, such as sour cream, sweet evaporated milk, cooking oil in recipes, and others. Great book for an old widower like me!

Great Smart Book with great recipes with health in mind!
When I first received the book, and flipped through some of the recipes, and I was suddenly excited. I do not normally get excited about such thing, but this book covers it all! It provides recipes for every course, and great variety with health in mind. It provides simple instructions, serving breakdown of health benefits, and diabetic serving content. This book is very informative, very diverse with the recipes, and an absolute steal when you pick it up used!
