Use 100g vegetable oil(NOT avocado or olive) Per 10g peppercorns, better if crushed Heat oil to 120C or 250F Maintain the temp for 15mins You are not boiling or frying it, just slowly dissolving tasty scents into oil. Now you have lovely savory Paralyzing oil Use it like a sesame oil or truffle oil, drizzle it when cooking is done, never heat it. It is somewhat fresh, not a lot, but still good enough considering you are buying this in US not Asia.

Good quality at good price. Peppercorns are very well cleaned of shiny black seeds and fairly well cleaned of stems, both of which I hate finding in cheap bags. It's perhaps a little bit more stem-y than I'd feel is perfect but im probably being nitpicky, this is definitely the best source i've yet found at any reasonable price. $30 for 16 oz is a great price. That's below $2 per oz. Compare to other products that ask $8 for 2 oz or $16 for 4 oz. Rare to find a deal like this on Amazon. You need to use sichuan peppercorns a lot to need 16 oz of them (it's a big bag..) but if you do then this is the one to get.

These little flower berries are over the top amazing taste bombs! Floral, fragrant, spicy, but not hot pepper spicy, these little power pods put the Szechuan into our homemade Chinese chow, but took our grilled smash-burgers to a new tasty level. Yum!

I can still recall a vague childhood memory of going to the local Asian supermarket and stocking up on the latest Chinese herbs and spices not sold elsewhere in my area. One of these was hua jiao (Sichuan peppercorn), and out of the countless, seemingly endless varieties of spices and herbs we bought, only hua jiao stood out in my mind. I used to relish the opportunity to add it to every dish whenever I could; unable to resist the numbing potency and delightfully strong citrus-like flavor, and once our meager 2 oz supply ran out, all other food seemed lacking. Now, many, many years later, I am pleasantly surprised and impressed to discover that it is available online at a somewhat reasonable price, and at a much better quality than that I used to remember. A strong wave of nostalgia instantly hit me the moment I opened the bag, and I didn't hesitate to add a pinch, or a generous amount to spice up everything from improvised ground turkey noodles with napa and tomatoes, to fried rice and even lasagna. My first package lasted 6 months, and unfortunately, when I ordered my second bag, it arrived with a puncture wound in the back of the packaging. This broke the vacuum seal, and exposed the delicate spice inside to the open air for who knows how long, diminishing much of the flavor and potency. Fortunately, Amazon was quick to issue a replacement, and it came with no quality issues. Overall, while I believe the price could be lowered, I have been unable to find a better source of Sichuan peppercorn at such good quality, and a somewhat palatable price point. Would recommend.

So fresh and delicious. Used to make chili crisp and it turned out so well! Every time I open the pantry the smell makes me want to cook.
