Sharp and well made.

Quality for the price what's the catch? These are too cheap. they should be priced higher.

Very sharp, well made boning knife
Not sure exactly what to think about this knife. On first examination, it is a very well designed, balanced, and very sharp boning knife. The traditional shape of a boning knife makes it ideal for carving meat from bones. This one has a very nice profile. I particularly like that near the joint of the handle and the blade there is a small (1/2-inch) section that is not sharpened, providing a sort of protective area for your hands and a stop for your finger as you cut. This one is just 6-inches in length, which is perfect for many jobs such as carving raw chicken or shops away from their bones. Sometimes a longer version, like an 8-inch, will sort of get in the way with too much blade length. The handle is very comfortable and nice looking. The blade is very sharp but I have not yet tried to put a real edge on it. If it is made from the german steel as advertised, I'm sure it will take an edge. Not sure how long it will keep it, but certainly it can be sharpened well. Examination of the blade itself shows marks from the final grinding on both sides. The edge itself shows some raggedness, indicating it was sharpened by machine. And that is my issue with this knife; it looks like it is a copy, although perhaps an authorized one, of the original knife from Klaus Meyer. In other words, it looks like a knife that was manufactured for Klaus Meyer in China, with perhaps less attention to detail. I tried to go to the klausmeyerknife.com website but it is not working. That alone is a bit strange, since the brand is well known. Also I could find no real reviews of the KM products except on Amazon. But for the moment I will use the knife and see how long it lasts.

Good balance and well-made
This 6 inch boning knife from Klaus Meyer's Arcelor series is my first experience with the brand. Apparently they have been in the business of bladesmithing for more than 3 decades. The quality is most obvious in the German steel blade, which is thin, has some flex (as a boning knife should) and is quite sharp. I've used it regularly for a couple of months now and the blade has retained its sharpness. I'm using it primarily on vegetables and fruit. The first time slicing through a delicate tomato made me truly glad to have this knife. It's full tang and really well balanced. The bolster really does help with control. The ABS handle is my least favorite part, though it doesn't feel cheap at all. I'm pretty sure the handle material is what allows them to sell such a quality blade so affordably. I'm hoping to add more Klaus Meyer knives to my collection. The packaging isn't great, but I'd still give this as a gift because what matters is how it performs out of the box.

Okay sharp but
First thing I noticed is that it is only as sharp as the box store knifes. I expected a boning knife to be sharper really. The second thing is the Bolster to tang is long and as sharp as the blade. Which is dangerous as it will cut your finger if it slides down the knife as you turn and cut.It is as thin and flexible like a boning knife should be, but having a sharp edge where you don't expect one to be drops the rating down as if your hand slides you will be cut

Sharp and Flexible
Boning knives were designed to cut meat from off the bone and for separating pieces of meat like the drumstick from the thigh. However, I like boning knives for more than what they're designed for. I use a boning knife much like I would use a paring knife. Why? I like the size better than a paring knife and I like the flexibility of the blade. So I use it to cut vegetables, cheese and general prep work as well as the normal things it was designed for. I even prefer this boning knife to the chef's knives I own for most lighter prep work.This boning knife checks off all the important boxes for me. I like the thin blade. It's a little whippier than my other boning knife and the blade is very sharp. I like the ABS plastic handle. My wife likes to soak the cutlery and knives prior to cleaning up after dinner. The fancy wooden handles are not suitable for that kind of handling. The blade is German steel and full tang construction, and the bolster is heavy and solid. Too many knives at this price range have phony bolsters that are more like blade covers and are there for the look only. This knife is constructed like better knives. I love the thinness of the handle, it fits perfectly in my grip, and is light and maneuverable.My only complaint is that it is not packed in a presentation gift box like the more expensive knives I have purchased It's not showy enough for gift giving. If you need a boning knife and don't care about the presentation, this is a perfect combination of price and quality. I love using this knife and highly recommend it.
