Impressive quality for $40!!
Iโve been using the Victorinox Fibrox Chefโs Knife for the past couple of years and a chef friend of mine suggested I try a Japanese knife, which tend to have harder steel and wonโt dull as quickly as the Victorinox.Call me skeptical, I had seen the Mizu Knives VG10 Chefโs knife on Kickstarter a couple months ago but never pulled the trigger and now they are selling an AUS8 version on Amazon. But at $40, itโs less than what I paid for the Fibrox.Have to say, Iโm fairly impressed with the quality of the knife for the price. It came out of the box super sharp and made my gameday prep work a cinch. Diced up a big bowl of pico de gallo and filleted a bunch of chicken breasts.Iโve only been using it for a week, but it definitely feels like itโll handle the kitchen duties better. Will be using it for the next month to see how the edge holds up.All I can say is buy this knife if you want a sharp knife. Great blade
I use knifes for work and carry one as an everyday carry so I know how it feels when you finally get a good blade in your hands I would have paid double what I paid for this one the feel of it in my hand is very important to me and this knife is great razor sharp right out the box and not too big and bulky as some chefs knives tend to be you will not regret this buy totally recommended for anyone who uses it daily

Great Chef Knife
Your browser does not support HTML5 video. ย This is a great 8" chef knife.The AUS 8 blade gets razor sharp and holds a decent edge. I like the steel more than the 420J of the Ginsu Cleaver (softer steel that is easy to sharpen, but doesn't hold an edge for long), and about as much as the VG-10 on the Zhen vegetable chopper; see attached video for sharpness and picture for comparison between knives.The knife is well balanced and the handle design is comfortable. I also like the G10 handle more than the TPR on the other two.

Add this edge to your cutting board!
This is a great knife. It has an excellent edge profile and a great handle angle that makes slicing and disassembly of meat cuts, fish, and veggies almost effortless. It cuts almost like a double-beveled sushi knife. It looks quite elegant too, with a polished triple-riveted micarta handle, nice bolster, and a matte blade. A Forschner 8" Bladesafe fits this perfectly.As nicely as this knife is profiled, it isn't very good for chopping, and I'm reticent to test its fine edge with bone breaking, so it will remain a welcome addition to my 10" and 12" Forschner chef knives, but not a replacement. My tiny girlfriend isn't scared of this one though, and she'll decline to use my bigger ones. I'm quite pleased overall.

Simply love this knife
Makes my cooking life much easier. I cook most of my meals at home because I love fresh everything, I needed a knife that would slice garlic and other such items paper thin and this does the job. Perfectly balanced (I actually balanced it on one finger) and very attractive, itโs packaged in a nice box and comes with a polishing cloth.

Very surprised about this knife in a good way.
I have coworkers that have used this company's knives before so I figured that I'd buy one and see for myself since I have heard only good things about them. Took it out of the box and went to do work and was very happy with it. Out of the box, the knife is very sharp and sturdy. I'd definitely recommend this knife to anyone that's in the kitchen industry or as a gift for anyone that dabbles in the kitchen!

Great knife for the money. Would buy again.
Bought on sale with a gift card. Couldn't be happier. Arrived sharp and fits the hand comfortably. Good balance. I did sharpen it some more myself and can make micro confetti if I want to.
