How do you adjust the coarseness on the grinders? It appears there's no specific settings, just turn the screw and test as you go along.

That is correct. It doesn't click into a specific setting. Just turn the knob to the tighter side for a more fine grind and turn it to the looser position for a coarser grind. Use caution not to turn the knob too tight, it won't be able to turn.
