Rose Elliot has also introduced me to halloumi for which I am eternally grateful - her combination of it with coriander and tomato salsa and courgette made me wish I had discovered it far sooner. This is my favourite dish ever! I also never tasted goat's cheese before I tried the butternut squash and goat's cheese gratin from the book, and what a godsend - rarely have I tried anything so tasty yet also quick and easy to prepare. But the food is not just tasty - as promised on the cover, it is quick to make and most of it will be made and consummed greedily in about 30 minutes. Needless to say, this is the only book I use on weekday cooking. Vegetarian Meals in Minutes is the easiest and quickest way to wipe out the bore from your traditional "pasta with stir in tomato sauce" veggie meals. Good basic cookbook
I have several veggie books on my shelves but I recently bought this one having seen it at a friend's house. The recipes are nice and easy to make and follow, the pictures tempt you to try new things and they are ideal for the busy lives we all lead as the recipes only take a short time to make. Good everyday recipes.

Vegetarian fast food
Just what I was looking for: healthy recipe ideas for packed lunches and light evening meals that don't require too many fancy ingredients or time to put together (the pitta pocket fillers are handy). I'm not really a dessert person, but the quick, tasty recipes have made me realise I don't have to be baking pastry and doing fiddly toppings for hours. If you love spending time in the kitchen this book is NOT for you!

Waste of money
I bought this along with 'Vegetarian Supercook' by the same author and have never been so disapointed with a purchase. Both books are simple and the recipies seem straiht forward , but the actual dishes are unappealing. I bought these books looking to be inspired into cooking decent, substantial meals and was left with not one dish i would even attempt. To include bread, salads and puddings in a book that is described as meals is misleading. Also thin on pictures , thats a personal prefferance but i do like to see whet im tryng to cook. Will be getting rid of both booka unfortunately.

This book is OK. Not nearly as good as other Rose Elliot books. Save your money and just buy her 'Complete Vegetarian' instead.

Delicious simple and creative recipes
I love Rose Elliot, her recipes are brilliant for vegetarians and non vegetarians alike. Simple and really tasty.

Lovely book with some great recipes.
Our friends had a copy of this book and the recipes in it always proved to be very tasty. No surprise then that we have now invested in our own copy!
