Q: Do these shoes have removable insole?

Short answer is yes. I am on my second pair of this particular shoe as I find them very comfortable. Not sure I would regard them as ‘hiking’ shoes as they have a pretty flat sole and are not waterproof. There are many other Keen hiking shoes with rugged soles and waterproof uppers to choose from which would be better for hiking. I would describe these as urban walking shoes. Regards.

Q: Im size uk 10 are these small or large fitting?

I used to buy size 9 shoes but find that 9 1/2 in Keen shoes fits me better. Would suggest a half size bigger than your usual.
