I tried to beat 7 egg whites with 1/2 teaspoon of this cream of tartar but it won't get stiff at all. Still watery after long time beating. why?

Hi Doug...If you are having trouble beating egg whites to stiff peaks, it may be 1 of 3 things.  If any of the yolk got into the whites while separating, this can lessen the ability to form stiff peaks, as can contamination from oil, fat or detergent on the utensils.  Lastly, never use a plastic bowl to beat the egg whites, since fat molecules are attracted to some plastics and may leave a film on the inside of the bowl.  Hope this helpful.  ~Tina
