Can the Instant Pot be used for canning?

Accepted Answer

No.  This is because you can not verify that the pressure remained consistent the entire time.  For example, to can  low-acid foods and meat you need to first determine your elevation.  In the area on KS I live in over 2,000 ft above seal level.  As such, I have to pressure can at 15 psi for the entire time the recipe calls for, and if the pressure drops below 15 psi the I have to start the time over once I get it back to 15 psi.  If these guidelines are not followed, there is a significant risk that botulism spores are not destroyed.  Home canning is both a science and an art, but do it wrong and you can kill someone.

Question 2

To those with 3qt size, are you happy with that size or would you have preferred the 6 qt size?

I have a 3 qt and a 6 qt.  I use both.  If we want left overs(just the 2 of us) I use the 6 qt.  Small batches or side dishes the 3 qt.

Can anyone share a favorite one dish meal that you make with this pot? I have never used a pressure cooker. Thanks!

I found this great recipe for Pulled Porkhttp://www.pressurecookrecipes.com/pressure-cooker-pulled-pork/I used a 6lb pork shoulder, my favorite rub, and my favorite BBQ sauce. Cut the shoulder up into smaller pieces (4-8 pieces)Use the saute mode to brown all sides of the piecesUse some BBQ sauce to de-glaze the bottom of the panPut the shoulder pieces back in the pot, and cook them for 60-70 min on High pressureTake the pork out and then shred it.  Empty the pot of the juices.  If desired, use a fat separator to capture the juices.  Put the shredded meat back in the pot, add the separated juices (if desired) and the remaining BBQ sauce.  Mix and coat the meat thoroughly.  Serve immediately or set the instant pot to warm to serve later.

How to make rice? there is no water marking for rice in the pot..

The older IPs have water markings for rice cooking like a rice cooker (mine for instance does - bought in 2016), the newer ones don't because people got confused about it and didn't know what it was supposed to be. So IP did away with the markings. ItThe Instant Pot still works very well for cooking rice, though - you will have to find out about time and rice to water ratio yourself, because not everybody likes his rice the same way. For measuring rice and water use the small plastic cup that comes with the IP (same type that comes with rice cookers). With white rice you can use the "rice" setting, with all types of brown rice use the "pressure cook" setting. I like my rice moist and soft so I use 1 cup of rice to two cups of water for brown rice and cook for 22 min.
