How many pockets for this drawstring bag?

3 compartment ( 1 main compartment, 1 front zipper pocket and 1 back anti-theft pocket ) and 7 pocets ( the main compartment features 4 pockets including 1 zip pocket, 2 patch pockets and 1 bottle holder without bottom support).

The interior pocket is not deep enough for my needs. It won't hold a phone?

Thst's not true. All the pockets including the interior pocket and back pocket can be put in any size phone.

I don’t think I would find a use for the pocket on the back?

You can put the important items like the phone, wallet, bank cards into the back anti-theft pocket.

The only complaint I have is that there is no water bottle holder?

That's not true, 3 of the 4 styles features the bottle holder(no bottom support) the classic style does not have the bottle holder.

How to adjust the shoulder straps?

1.Loosen the trings; 2.Adjust the 2 buckles to the proper position(2 buckle should be in same position); 3.Hold the string above the buckle tightly and pull hard to the end. Notes: every time to adjust the straps, please loosen the strings firstly.
