How easily will the adhesive come off is it like the 3m hooks that you can pull the tab? New doors dont want to ruin them with sticky goo...,

In our testing, the following instructions helped us avoid paint damage: To safely remove lock from door: Take a piece of fishing string and slide it from side to side in a downward motion, behind the base of the lever lock. How long are the prongs in inches? My handle sticks out quite a ways from the wall

The prongs are 3” long. Mine looks just like the photo.

Can it work just as a lock for the door? Not for kids?

Yes, However, if you're on the other side of the lock, you won't be able to get back in. You would be locking yourself out. its a one way lock.
