Nobel Platinum Triply Stainless Steel Cookware Deep Kadai with Stainless Steel Handled lid - Wok for Stir Fry Cooking (28 cm Diameter)

I wanted a solid, high-quality, stainless-steel wok-shaped pan to replace my carbon steel wok whose base had got so warped that it no longer sat flat on my induction hob. Apart from the lack of contact with the hob’s heating surface, the pan had a tendency to wobble, spin around and slide, was prone to rust unless washed and dried immediately and was impossible to keep truly clean. This kadai is a heavy and stable pan (my 32 cm version weighs nearly 2kg without the lid!), and it doesn’t need to be held while its contents are being stirred. It heats up surprisingly quickly. The handles are securely riveted, and the whole pan, with its useful lid and highly polished finish, is beautiful to look at as well as being much easier to use than the cheap, ultra-lightweight carbon steel woks that are recommended for stir-frying, but which are better suited to cooking over a flame than placing on a slippery induction hob. Stainless steel is easy to keep clean. Non-stick finishes degrade within months and are unnecessary if you know how to fry at the correct temperature. As for tossing foods, that’s unnecessary too. You can achieve the same effect by using two wooden spatulas to lever food up into the air or move it around. I am expecting this pan to outlive me. UPDATE: I bought two smaller versions of the above pan: the 20cm and 24cm. The 20cm pan is fine, but the 24cm pan refuses to work on my induction hob. There is nothing outwardly wrong with it and the base is perfectly flat, so be prepared for random flawed products.

Nice piece of equipment but heavy to wash and store

Excellent piece of cookware, high quality korahi/kadai. Stainless steel means you can use metal implements, no non-stick coating to wear out (meaning no toxic chemicals), and a heavy metal base for good and even temperature conduction. Handles stay cool. Great lid. Easy to clean. All in all, this is cookware that should last a very long time with a bit of care, many many years, perhaps decades! Makes superb curries.

Fantastic Kadai, very durable and good size. Has seen many curries and will see many more.

Although clearly stated on the item it failed work on three different induction hobs. Very disappointing because it appeared of good quality and no doubt works on conventional gas or electric hobs

Nice product and heavy easy to clean

wanted a bigger stainless steel kadai(bigger than 22cm) for meal preparation purposes which is induction compatible, has a lid, good heat distribution and easy to clean. This kadai from Vinod fits my purpose perfectly. The shape makes it suitable for curries and gravy, also the depth is adequate for deep frying. It is heavy and robust, being stainless steel it can be cleaned easily to mirror shine finish. Overall i loved the product and would recommend it to anyone looking for a good stainless steel kadai that is induction friendly.
