We had this cream at my daughters for thanksgiving. the carton says "grade a cream"- that is all. now i am reading that it has gellan gum. which is it

Hi there - We offer two versions of our heavy whipping cream. One is regularly pasteurized (HTST), meaning it is heated to a minimum of 161 degrees for 15 seconds and has a shelf-life of about 21 days. This HTST pasteurized heavy whipping cream only contains cream. The second heavy whipping cream is ultra pasteurized (UP). This cream is heated to about 280 degrees for 2 seconds and has a significantly longer shelf-life. The gellan gum (created through fermentation of sugar) is added to this product to act as a stabilizer and prevent the cream from clumping into butter over this extended shelf-life. Hello! This product does require refrigeration. Additionally, if it remains unopened it should last until the expiration date printed on the carton. Once it is opened, it will be freshest within 7-10 days.
