This blend is delicious and yes it has a lot of carrots, I like carrots and they’re good for you! I usually combine this with ramen noodles. Usually a cup and a half of chicken stock brought to a simmer a little less than a quarter cup of vegetable blend, I simmer for about twenty minutes as it takes a while for the veggies to rehydrate. I add the ramen and stir, I toss the flavor packet in the trash and add garlic powder and pepper and when I have it fresh basil. I am going through chemo so I can tolerate this well and I get veggies and a it makes me feel good!

Theres alot of veg for the price which is the good thing. But that said the product itself tastes stale. I bought it to add nutrition to ramen, but even with the strong flavor of the ramen seasoning, it tastes stale.

This bag of dehydrated vegetables contains: Carrots, Potatoes, Celery, Onion, Bell Peppers, Tomatoes, Cabbage. It is a pretty good mix. I rely on dehydrated vegetables for use in quick soups (I'll make a mug of broth and add leftover whatever from my fridge, and add a spoonful of dehydrated veggies), boost up egg dishes, and longer simmering soups. Really a must have for any prepper, or anyone who wants to round out their pantry. Makes nice addition to meal prepping, particularly shelf stable stuff (think of camping meals, emergency meals that just require water, etc). Good way to get some vegetables if getting to the store is out of the question, or produce is low, or way too pricey. This is a good mix, at a good price. I will likely buy it again. However, it is worth buying a few different brands to get the various varieties of vegetables. I like the inclusion of cabbage in this mix, where as my usual brand does not. So I am learning to take look at actual ingredients, then keeping a 2-3 brands on hand to choose from. I find that they stay "fresh" because there is really nothing to go bad. But when I have excess and have room in my spare fridge, then I will just store it in there. But any air tight container in a cool dark place should be more than adequate for a food item like this. Really nice product! Excellent quality - Cabbage, tomatoes, carrots, celery & onion. I used it in two different ways in two days - Added 1/4 cup to ramen to boost nutrition in a hurry for lunch. I made a quick dinner soup using 1/2 cup of these veggies, vegetable broth, and canned chickpeas (SO DELICIOUS!). The pieces are the right size - not too big, not too small. Great flavor, too. I can tell the veggies are dried when they're at their peak ripeness. I'm really glad I discovered this company on Amazon!
