Is this product made of stainless steel and plastic or aluminum?

I think there is both steel and aluminum. The white is plastic. The softer metal will bend, I can attest to that.

can I use this cutter to also make carrots and sweet potatoes fries?

Yes. I have made sweet potato fries several times. I microwaved the sweet potato for 1 minute 20 seconds and after trimming it to fit on the machine it worked great. Note: I did use the larger opening blade for the fries, have not tried the smaller ones on a sweet potato yet. I am saving the the trimmed portion of the sweet potatoes in a freezer bag and will use them to make mashed sweet potatoes.

Does this cut sweet potatoes?

Yes, but the sweet potatoes need to be slightly cooked before using the Tower Fry Cutter.

Is this product guaranteed?

Ehhh? I do not make this product and so there fore I cannot offer a Guaratee. Everything smaller than a refrigerator is made in China these days. And everything you buy online has an assumed risk to the buyer. It is just the nice little lateral quadratic slicer you buy off of amazon. I think if you tried to overload it... it would have a problem....You may want to use smaller Yukons or Red potatoes as it is not large enough to receive a russet...John
