where are the cows from? if south america not good as they are cutting down the rain forest !

The gelatin is from Brazil. Great Lakes gelatin and collagen, I believe is from N. American cows. This info is right on the bag. I am surprised you didn't see it.The quality seems excellent. Great Lakes is too.

When i put it in coffee, it instantly hardens. It this because i kept it in the the fridge or is it a reaction with the coffee?

The gelatin should be kept at room temperature. It should also be proofed with cold water. So take your gelatin amount mix it with the same amount of cold water, let set for a couple minutes then add to the hot coffee. Store and enjoy.
