Does is work with ultegra 8000?

Not sure about R8000, but I just installed my 105 R7000 cranks and the compression cap was exactly the same as my R600 cap. Should be all the same.

Does this work on a Trek FX 3 hybrid bike?

Depends more on the component group model, rather than bike model. It works on all hollowtech cranksets.
