What is the difference between this model and the pro version? thanks

The pro has a 3’ longer cord, a pretreated, and some sort of brush roll cover. This one is excellent.

Its called "pro heat' does it heat the water?

Would this remove soil? My dog destroyed my plants and brought them inside so it was all over my carpet. I managed to vacuum

You would need to vacuum the soil first to get up all the debris. Then, when use this cleaner, it will get up all the spots. I have 4 dogs, and every spot they’ve left behind, this cleaner has cleaned them all up.

Are the uphostery attachments all bristle? Or are they like the rental ones with the smooth surface?

Both attachments included have bristles. The red you see in the picture of the heads are the bristles.
