This product (Baked Cheetos) is sold at other stores and contains a GF (gluten free) label listed on the front of the package. It is listed on the bottom right side. I am unsure why it is not listed on this package.

I don't have any Baked Cheetos at the moment. You would have to look at the ingredients listed on the package or check the description of the product on Amazon. Sorry I can't be more helpful.

How can you guarantee they are not expired and stale?

The box and the bags are clearly marked with an expiration date. You usually get 30 or 60 days into the future on these cartons. I have never got expired chips yet.
