Mercer Culinary Ultimate White, 7 Inch Fillet Knife

I've been fishing and cleaning fish for decades, used countless fillet knifes of all prices. This one is easily worth double it's price. Nice balance of easy/fast to sharpen and holding an edge. Nice balance of strength and flex too. Good sized, comfortable and grib handle that won't fall apart. The blade is big enough for any fish and has as good or better steel then the 'standard' freshwater fillet knife (Rapala). If you need a great fillet knife then buy it. It's as good as anything out there and only $12! BTW this is what fishmongers use, only fools believe $200+ knifes work better.

Sharp knives with good quality, they hold an edge and have a sturdy plastic handle. Not show pieces, but great work horse for cutting in the kitchen.

Super sharp blade that kept its edge nicely. Good value knife. Stainless steel showed minor rust after saltwater season but cleaned up with some steel wool.

Very good for kitchen fishing applications but doesn't float would need tie off of 20# fish line to keep from loosing it when cleaning fish

I bought this looking for a sharp, non-flexible boning knife. blade length was the perfect size and it can be used as a paring knife for someone looking for a little longer blade. handle is hard plastic that has been slip proofed. Decided on white as a little bit of a change. And the cost was very reasonable. I have purchase Mercer knives before and have always been happy with the product.

Epic fish Cutting knife

Mercer is one of my go-to restaurant brands for being available off-contract and for being high-quality. From specialized professional food equipment like 8 inch turners to generic knives, I can count on this brand to have something for me. This knife is of excellent quality right out of the sleeve. I like to sharpen all of my restaurant's knives before use, but orders started coming in before I had the time and it was 97% as sharp as my personal finish. No further sharpening necessary. The fact that it's also reasonably cheap enough to replace after one of my employees does something stupid with it is also a huge plus. This seller in particular was also very fast in shipping. I highly recommend this distributor for this particular product for having the product at my door in a timely fashion.

This line of kitchen knives is fantastic. You really can't beat these knives for the price. I hone every time I use them and they stay sharp until I do something dumb. This knife is no different. If you're considering this knife, do it, you won't regret it.

Sharpest knife in the kitchet. Affordable. Wish it came with a proper sheath for fishing trips.

Day one: cut through a whole chicken then into my knuckle… don’t ask how… I’m skilled! Day two: cut through tomato and removed a finger print… this has some potential benefits when the bleeding subsides. Day three: took out of the drawer… family (in unison may I add) screamed “NO! NOT THE BLOOD KNIFE!” Now I’m not trusted with sharp knives. This is what happens after years of crappy kitchen knives.
