Q: Could the roof be reversed? This is perfect but we need the roof pitch high in the back and low in the front

Roof has misaligned holes in the roof. You can’t put it on any other direction. I had to bend mine just to get it to work. By the time you get half way through building it you’ll wish you returned it already.

Q: Could you leave the back open and put 2 together for 10 X 6?

If you like to make easy hard. The corner walls are preformed w/90 bends in them. The roof line would also be weird

Q: Can this shed be grounded against lightning?

Yes it can, just run a grounding wire to a stake in the ground, that should help prevent in voltage of potential building up and keep you safe. Just attach it to lowest point with a self tapper, primarily one that is conductive.
