Stachys floridana is a species of betony in the mint family, Lamiaceae. It is native to the United States. Much like its relative, the Chinese artichoke, the "crisp, succulent" tuber is edible, and has a pleasingly crunchy texture and a slightly sweet taste. Produces large tubers up to 3 feet long. Tubers can be planted any time of year. You can cut the tubers into pieces for more plants much like potatoes. Each piece should have at least 3 segments for best results.

This is a weed. DO NOT PLANT this in your garden or flower bed.
If you want to fight control of your yard, garden, or flower bed, by all means, plant this weed. It might be appropriate for a meadow or butterfly garden, I don’t know. All I know is that these are prolific in North Florida. No need to pay good money for them. Just dig them out if a ditch along the road and viola!
