This is somewhat subjective as to what size cookies you want to make. The dishers come in the model number - size / ounces.  Perhaps you can check your recipe for a suggested size.  #47139 - #6/5 1/3oz, #47140 - #8/4oz, #47141 - #10/3 1/4oz, #47142 - #12/2 2/3oz, #47143 - #16/2oz, #47144 - #20/1 5/8oz, #47145 - #24/1 1/3oz, #14146 - #30/1oz, #14147 - #40/3/4oz.  They are also color coded. The yellow disher model #47144 is a #20 scoop or 1 5/8oz. The blue #47143 #16/2 oz might be a good size for cookies, #47140 - #8/4oz may be good for serving mashed potatoes, stuffing, ice cream etc..

When buying my Vollrath scoop (which I love), I found the following info helpful.  Given that we use around 3-4 tablespoons of dough for large cookies at home, #16 (blue) or #20 (yellow) might be appropriate for what you want to do, but the following measurements can help you decide:  
#6 White = 10.6Tbs or 5-1/3 oz.
#8 Grey = 8Tbs or 4 oz.
#10 Ivory = 6.5Tbs or 3-1/4 oz.
#12 Green = 5.33Tbs or 2-2/3 oz.
#16 Blue = 4Tbs or 2 oz.
#20 Yellow = 3.25Tbs or 1-5/8 oz.
#24 Red = 2.66Tbs or 1-1/3 oz.
#30 Black = 2Tbs or 1 oz.
#40 Purple = 1.5Tbs or 3/4 oz.

What size Vollrath scooper is good for cupcakes?

Accepted Answer

The blue one. An even 4 Tbsp (2oz.) makes for the perfect cupcake. 
If you want a great dome you can always use the 400/325 method as well. After filling cups 2oz full, bake the cakes at 400 for the first five minutes, then down to 325 for the remainder of the time - usually 15 minutes. Perfect dome every time! ;)
