Oh My This is GOOD Vinegar. I didn't know what to expect and what I received I could never have imagined. When you taste it for the first time, you know it's vinegar BUT.... The flavor is hard to describe. I will say it's sweet, as vinegars go, with a taste that is reminiscent of chocolate, good chocolate, not cheap chocolate. I was trying to recreate xi’an famous foods cucumber salad and this was the missing piece to the recipe. So if you are pickling or making Asian vinegar based salads and it seems like the flavor is not quite right, this might be the key.

I use this when stir frying, grilling, roasting etc. and love how it enhances the flavor of all dishes. Careful not to use too much. A little is all it takes for that wonderful umame.
