Can you make this in the microwave?

I don't believe so. The cooking and stirring on the stove is what will thicken and smooth. I think if you do it in the microwave, it will be lumpy.

Do you have to have the butane torch for this?

The carmelzing sugar is in the package and you can do it under the broiler, or with a torch. Watch carefully if you do it under the broiler.... Browns very fast.

do you caramelize sugar before cooling in refrig?

Here are Chef Alton Brown's instructions. Bon appetite! Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

This is difficult to find in any grocery store. I'm so happy that Amazon carries it. It tastes like homemade without all of the fuss of making creme brulee. Its important to follow the instructions completely. I recommend that you don't open the sugar topping until ready to singe and crystalize, because it will harden.
