Gorgon Fruit
I rinsed these first since they had a light dustiness, but they were otherwise very clean. I soaked about 3 ounces in 8 ounces of water for 12 hours, and by then they had softened enough that I could pinch one open with my fingers. After a 30 minute simmer, they were still firm but had opened up and softened to a texture similar to a raw kernel of corn or cooked hominy. See photos for progression of softening. I tried them in chicken soup and also in a rice porridge with brown sugar. In both dishes they added great texture without overpowering the flavor. The taste and aroma are mild, with an earthy note that works well in savory or sweet recipes.
