Keep in mind that this is Emeril's NEW new orleans cooking, and as such the recipes are definitely not the typical fare. There's only one recipe for gumbo, for instance. While this is a good companion guide to other N.O. cookbooks, I couldn't recommend this to a beginner in the field. If you're looking for classic new orleans cusine, try La Bouche Creole by Leon E. Soniat

Thanks for the Autographed Copy!
I opened my package and found an autographed copy of the book! Totally unexpected bonus. I haven't used the book yet, but since it is from the era just before Essence of Emeril, I'm sure it is good. I got it with Paul Prudhomme's book for a nice take on New Orleans cuisine. I took a basic class on creole and Cajun cooking techniques - now it's time to try out some recipes

I took a chance and bought 2 used books that arrived in near perfect condition. Well worth the price.

Great cookbook
My family has been using this cookbook for years and I've finally bought a copy for myself. Everything we've tried has been delicious. The only downside is that many of the recipes are a little too involved to make without planning ahead and getting some special ingredients.

Great Recipes
I love this cookbook - it has healthier, lighter versions of Emeril's excellent recipes. There are tips, shortcuts, making your own seasonings, and how to stock your pantry. I have several of Emeril's cookbooks - this is a great addition to my shelf!

The Best of the Best!
Emeril's New New Orleans cookbook is the best of his long list of cookbooks. Each recipe boasts bold flavors and New Orleans' style, while reassuring us that "this aint rocket science" and encouraging us to be creative with ingredients. When anybody asks me what my favorite cookbook is, I show them the sauce-stained NNO and suggest they buy their own copy.In post-Hurricane-Katrina days, these recipes help keep the beauty of New Orleans alive in our kitchens.

Learning the basics of Louisiana Cuisine
I started using an Emeril Lagasse recipe for crab cakes found on line many years ago and since then have been a big fan of Emeril's Creole Seasoning, I bought this book because it was his first book published and so far I have loved reading and using it.
