The sake brewer's bible. This is the book to buy.
I am a sake brewer. Let's start there. This is a hard beverage to make. There are more than 2000 years of experience that was passed down from China, into Japan, and iterated on constantly until the modern brewing techniques gave birth to the wonder that is the Nihonshu (Japanese Sake) we get to enjoy today. If you have become interested in sake, sake brewing, or even just want to know why this beverage is considered one of the hardest to make in the world, this book is for you.I own every english translated book that exists on sake production and I easily tell you that this is the one to get. The Japanese Brewing Society actually publishes a book as well and you need to write them directly to get it. While that will certainly add some charts and graphs that give alternative perspectives, it pales in comparison to the level of depth and even the breadth of information you will find In Gautier Roussille's book.Sake requires hands-on training, visual cues, charts, measuring tools, and much more to really produce a great product, but somewhere, somehow, you need a place to start and get the primer for how this all works and to have many of those pesky questions answered that the other books skim over. Perhaps you want to know the chemical processes, or want to know what some alternative approaches are , what they are named, and how they'd effect the end result. Maybe you want to choose a type of rice to ferment with and don't know how it will effect the taste or the aroma.....well... then this is the book for you.Why am I sell this so hard? Well.. for one, I want craft sake to take off around the world. It is a wonderful beverage and more people should get to experience quality sake. But additionally, I don't want you to have to stumble through the hoops many of us have to find the answers. A lot of work went into putting this together. Literally sources that are not even in English. Please support Gautier and his work, so we can all continue to grow together as each of us unlocks the secrets from 2000 years of sake brewing.

A plethora of well written information
I got this book from the translation kickstarter and has been a real treat. I have long looked for a great book that really goes into detail about the process and history of sake. Nihonshu is very well written and has lots of information very well presented.

Not great, Awesome!
Awesome book. I supported the Kickstarter in hope a a great book and ended up with an awesome book that is easy to read and understand to someone that is looking to learn from scratch or to deepen their knowledge on Sale.

Best source of info on sake.
Fabulous book. The best and most thorough English-language source on sake - terminology, technical details, production and more. If you are interested in taking your sake knowledge to the next level, this is the book. (Do note - it is not a producer/buying guide.)

Das japanische Nationalgetränk umfassend erklärt
Nach dem Lesen dieses englischsprachigen Buches bleiben nicht mehr viele Aspekte zu Sake im Dunkeln. Die Informationsdichte ist enorm. Gerne driftet der Autor ausführlich in Details bei der Herstellung ab. Diejenigen unter uns, die in Schule einen Chemieleistungskurs belegten, werden wahre Freudenfeste beim Lesen haben. Für alle Anderen holen manche Ausführungen viel zu weit aus. Statt Bildern oder Fotos ist das Buch mit diversen Tabellen gespickt. Trotzdem verbergen sich im Textdschungel immer wieder interessante Informationen und Fakten. Nach der Lektüre wird man Sake mit anderen Augen betrachten und die Angaben zu erhältlichen Abfüllungen neu für sich interpretieren können. Ich finde es lobenswert, dass es nun auch für das japanische Nationalgetränk durchaus lesenswerte Literatur gibt. Keine leichte Kost, aber mit viel Hintergrundinformationen!

A pleasure to read and learn from
Nihonshu is a tour de force among sake books and a must have reference manual. The coverage of sake making techniques and processes from the common to the obscure is impressive. If there is one compromise it is that some of the more esoteric topics get a quick treatment in order to fit into this compact volume.For the aspiring sake connoisseur Nihonshu is a fantastic introduction to the craft, and for sake home brewers it is a guide to grow along with and come back to again and again. It is sure to whet your appetite for more information about this fascinating beverage.

Must buy sake book (for everybody interested beyond the sake basics)
Excellent book covering a lot of aspects so far not covered in other sake books in English (or German).Very highly recommend, as it finds a great balance between covering all the basis, providing sufficient details, but does not overwhelm.Don't be fooled by the simple appearance, considering the price -- it's more than worth it.
