3 hours, 4 injuries, still love it
This is by far the sharpest pairing knife we've ever owned!Decided to splurge on a Miyabi Mizu and start with something small to see if we wanted to carve out (pun intended) a new set of knives for home. Maybe using it on Washington State Apples wasn't the best idea as so far I've sliced my thumb on my right hand and stabbed the palm of my left. My wife has stabbed one thumb and sliced another finger (the worst so far). I mean our knife skills aren't that bad - well - so I thought. It's still day one.Maybe we'll frame it and hang it on the wall, it is a thing of beauty and has a perfect weight and balance - just be sure to treat the business end with the respect it clearly deserves!

Excellent knife for its role
Dang this knife is sharp. I do wish it were about 1/2 longer but overall super happy with the blade. It’s become one of my favorite knifes.
