can this be used in liege waffles?

Lars makes (or at leasts lists) two different pearl sugars: Belgian and Swedish. They are not the same. Belgian is used to make Belgian Liege waffles, and is designed to melt when cooked, leaving little sugar cratered waffles. Swedish pearl sugar should not melt, and is used for topping pastries.

What's the difference between Belgium and Swedish pearl sugar?

Swedish pearl sugar is smaller in size, therefore it’s use mainly in garnishes Belgium pearl sugar is larger in size, therefore it’s can hold temperature better and can be use in baking waffles

If you put one pearl in your mouth, will it dissolve easily, or is it as hard as rock candy? Also, is it non-gmo? I don't see that mentioned. Thank u!

This sugar is more like small granules as opposed to pearls that you would pick up one at a time. They dissolve easily. The manufacturer does not indicate that it is gmo.

My recent order is very powdery and not the distinct crystals as normal. Is this as it is intended or did the product get damaged?

Swedish pearls are sort of white in color, sort of large powdered sugar small chunk. Where as Belgium pearls are chunkier in pearl size, look more like crystals.
