Pakora KitThis is a simple recipe kit, and really easy to follow, and contains all the spices you need, and even the flour! Everybody loves a quick snack, and my pakora's are a great place to start. Now, using my pakora kit you will be able to cook these from home. Not quite as heavy as a bhaji, they a simple, and a delicious golden snack. Perfect with a mint and coriander chutney!Shopping List:2 chillies1 tbsp gingerFresh corianderOil for deep fryingFor vegetable pakora: 1 onion 3 medium potatoesFor mixed vegetable pakora: 3 medium potatoes 1 onion 50g aubergine 50g cauliflower 50g spinachFor paneer pakora: 100g paneerMethodHeat up the oil in a karahi or wok to a medium heat.Slice the onion lengthways very thinly and place in a bowl.Peel and grate (or very finely chop) the potatoes into the same bowl. You can also use aubergines, spinach and cauliflower or paneer chopped into small pieces.Add the freshly chopped coriander, chillies and grated ginger into the bowl.Sprinkle in Bag 1 and mix everything through using your hands.Add a small amount of water, a little at a time, to create a thick batter that coats all the vegetables. Squeeze the mixture through your fi ngers to ensure all the spices mix. Do not leave the batter mixture for too long before cooking.Test your oil is hot enough by dropping a little batter into the oil. If it browns and rises immediately then it’s ready. Very carefully drop in spoonfuls of the mixture into the oil and fry until golden brown.Using a slotted spoon move the pakora around until golden brown and crisp, then remove from the oil and set on some kitchen paper
