This a great knife. VERY sharp and good hand feel.

This is the second Mercer knife that I bought from Amazon. Four years ago I bought a 10" Mercer Carving knife for carving roast beef. I was sick and tired of stainless steel knives that I simply could not get sharp enough. Four years later the 10" is still razor sharp and I have never had to sharpen it. So this time I bought the 8" Mercer Carving knife. I absolutely love it. It is well built and has good balance. I also own a set of those German knives manufactured in Solingen. They are great knives, too. But the Mercer is just as sharp as the German knives. And the price for the Mercer is about 1/4 of the price of the similar German knife. I would give the German knives about 4 and a half stars. I take off a half a star for the price. But, if I could I would give the Mercer knife 6 stars. Exceptional quality for a very reasonable price.

A blade size and shape I was looking for. What I really wanted was a 7-8" version of my old Henkels 6" slender blade cooks knife. But nobody seems to make one. This seems to come the closest, and is reasonably priced.Came very sharp and I assume from reviews the steel is good. The handle is a little big/heavy for ideal balance in my hand. That's so individual, but lost it a star for me.

This is the second Mercer knife that I bought from Amazon. The reason that I bought this Mercer carving knife is because I was happy with my Mercer chef knife, which I have been using for at least 6 months now. As soon as I pulled the carving knife out of its protective case, I was happy right away because I can feel its sharpness by checking its blade. The cutting tests (cutting a piece of paper and fruits) confirmed that it’s super sharp. What I also like about this knife is that it feel nice in my hand and it has the right amount of weight. Since it’s still new, I am going to use it for now and will provide updates later.

This knife is very sharp and the edge lasts a long time. For the money, this knife will compete with the best out there. I have been using high end knifes for many years. This was purchased as a replacement for a broken knife (handle). I am please and will begin transitioning all my knifes to Mercer.

Best bang for the buck imo.I have a nice set with the magnetic base to show them off.You can get more expensive or cheaper knives but these split the difference nicely.Should last for yrs if you don't put them in the dishwasher.

This is a top quality knife in all respects. High quality materials, construction, and finish. It's a pretty knife and just exudes quality. Nicely balanced and easy to grip. The performance matches the looks. I put it through its first paces slicing some baby backs...it went through them like butter. It's the sharpest knife I have ever owned. With proper care I expect it to last many years. Would buy again.

We have several of these Mercer knives and I have also purchased them as gifts for family and friends. It is hard to beat the quality of these knives. They hold their edge quite nicely and they sharpen easily and effectively as well. We have a lot of expensive knives and the quality of these is right up there with the best knives you can buy.

It doesn't get as much use as some of my knives since I using for carving meats rather than chopping, but even so its my new favourite knife. The grip is awesome which is really helpful when things get a little slippery. The edge has held up well for several weeks not (time will tell). Its very sturdy and feels well made.

Great knifes since I have 10" that's just a bit too long for most carvings and this 8" which is just perfect for everyday carving.

Perfect and sharp

Very well balanced,with a lovely comfortable soft grip.This knife is very sharp and cuts through all the joints of meat I've tried with ease.Holds the edge very well,well worth the price.very pleased with purchase.

Much better than the other knives we had. Still better 4 months later, but probably will need a sharpen soon.
