Best flour I have found
I bought this flour after reading a post in a Celiac disease chat room and it is now my favorite flour. Although not technically gluten free, I can tolerate foods made with this flour without any symptoms! (Note - I have Celiac Disease but I am not allergic to wheat.)It makes delicious breads, pasta, tortillas, pizza dough and more. We have used it as a breading and a thickener for sauces too. I can’t wait to try it in my Pecan Pie Muffins soon. Thanks to this flour I can finally enjoy my favorite foods again and my family can all eat together.I highly recommend it - so worth the price and waiting for!As a bonus, it does ship quickly, is well packaged, and is very high quality. Excellent flour
I saw this flour recommended by a small Brooklyn-based bakery called Apt 2 who makes fantastic breads and baked sweets. Wonderful flour to work with. Better flavor and texture than what I’m used to working with. Please support these small producers!

Love this flour!
We recently took a pasta making class and this flour was used. So to replicate our experience, we purchased and used this flour and the results were just as amazing as when we attended the class! I couldn't believe making pasta was so easy! This authentic Sicilian flour makes very tender pasta. Know it is for specific types of pasta (ie orecchiette, gnocchetti, etc). My daughter really liked the fact this type of pasta is higher in protein than typical white flour. The quality is wonderful and we will only be using this brand flour for all our future pasta making nights in our house. Buon appetito!

Castelvetrano Flour is always a win
I use this Castelvetrano flour in all of my sourdough baking, in a ratio of- 300 grs bread flour + 100grs Castelvetrano flour, OR- 200 grs bread flour + 200 grs Castelvetrano flour (the crumb is denser in my breads)The texture and flavors are nutty and wonderful. It does require a bit more hydration (like a whole wheat flour), but it's lovely. If you look to make bread with different flours, and are a fan of stone-ground flours (the best imho), definitely try this one.
