Q: can i put 2 33" wide doors why does it say max 30. just going to close off the opening a little more correct.

These are just wheels........I made my own door to the size I wanted. My door is super heavy and it holds it no problem. your issue will be attachment to wall, not wheels.

Q: How much space between the top of door and the top of the hardware for ceiling clearance?

From the top of the door opening to the top of the bar that houses the large wheel roller you need a minimum of 10.5 inches but you probably want the door to overlap the opening by an inch or so which would raise the min height by an inch or so. Smaller (regular sized) wheels/rollers are 2 1/2 inches shorter to the top bend.

Q: Would this work with a 2” thick door?

You will need 2 1/8” spacers for a 2” door.

Q: Could this be installed as an exterior shed door?

The hardware is listed with max weight. It will hold that with all hardware used. I would not use it outside if within 5 miles of ocean air.
