A commodity, as good as expected
I mix a bit of this water chestnut flour with the rice flour used in radish cakes. It makes the cake slices brown quicker and more uniformly. Does a good job.

I used it to make Chinese chestnut cake but it’s not working well. I feel bad

Thank you so much for selling this brand! My mother just told me that this is the brand my grandmother used, to make Chinese Water Chestnut Cake, which has a bit of a crispness and chew to it, at the same time.Cornstarch, wheat starch, potato starch, tapioca starch, etc... produces only chewy dim sims without that crispness required to make Chinese Water Chestnut Cake. I can't find water chestnut starch in any of the Asian grocery stores in Austin, TX anymore. I still have some in a ziploc from my family, but will definitely buy this when I run out.

No for water chestnut cake
I bought this is make the dim-sum style water chestnut cake and it did not work. I tried 2 different recipes with slightly different proportions and neither of them formed up enough even after refrigeration. They are just jelly blobs. I tried another brand with the same recipes and they came out perfectly. This brand is also more expensive... Lesson learned.

Bad water chestnut brand
Defective product, unfortunately there was no product review when purchased. Same issue with other reviewers, product will not solidify and remains in semi liquid state. Disposed of two pans of water chestnut cake from this brand. Lesson learned will not buy again.

Do not buy
The flour smelled kind of off and I tried to use to to make the chinese pudding. It never thickened. Try another brand.
