Q: When hooked to the 6 zone option, is the output 100 volts per zone? Or is it 100 volts divided over 6 zones?

Voltage is level for all zones it's the wattage that has yo be managed. The speakers have multiple taps for wattage draw. You can not exceed the total wattage

I contacted them on this as well. It is total watts combined. In other words, it is not per channel.

Q: How do you connect speaker wires to the posts in the back? I’ve never seen this style before and can’t find anything on YouTube

Use a screwdriver to loosen the metal plate and slide the copper wiring in between the plate and the box and then tighten the plate back down on the wire in the appropriate positive and negative terminal
