This Black Truffle Caviar is made from the black winter truffle juice, obtained directly from the fresh truffle during the cooking. The tasty juice is then reduced in small pearls through a very sophisticated technique called "sferification". The end result? Popping pearls have the taste of the finest truffles but the same color and texture as elegant black caviar. This product would work great with a variety of dishes.

Have had better
Was hoping this would be as good as a more expensive version of truffle pearls. Well, not as flavorful. I do not think would purchase this again.

These were very good..
These were very good.....and delivery was very prompt. I used them to amp up the truffle flavor in a mushroom risotto. Saved the fresh truffle to shave on top.
