Multi-Use, You won't be sorry you bought it
I was introduced to this line at a local cooking store, wanting a line of SS pans to replace my old ones that, while I thought were still quite functional, had started to look fairly grungy. The sales person saw me eyeing a couple of other lines, my thought process being that more expensive had to be better. Silly me. I'm a bit of a kitchen snob. Admitted. She proceeded to tell me about the construction, how evenly they heat, and that local chefs prefer them over the more expensive lines. A 12 piece set was on sale plus I had a 20% coupon, so I gave them a shot. I was so impressed with how they made my cooktop look new again(heat wise) that I started looking for pieces I knew I would want down the road. Thus far, I have used this pan as a roaster and I have made stock and cooked down large batches of vegetables. The wide bottom and relatively high sides made it perfect for these functions. It heats evenly and quickly. I do recommend using wooden or plastic utensils and if you have been using nonstainless or older pans, pay attention to your heat settings. You may need to adjust them downward. Looks like I don't need to replace my cooktop after all.

Glorious multi-use pan
This purchase was an indulgence but I have no regrets. It's lower and wider than a 6-qt dutch oven, and thus more suited to roasting or braising. It's awesome for making a big pot of spaghetti sauce. It's a beautiful, shiny, useful piece of kitchen equipment.

Mauviel vs. Cuisinart
Ordered the Cuisinart casserole and the Mauviel M'Cook rondeau (both stainless steel, same shape). Looked them both over carefully.The Cuisinart is 3 ply, Mauviel is 5 ply but the edges where you can see the ply measure the same. The Mauviel is drop-dead beautiful and feels heavier but I think that's only because there is so much stainless on the handles, and it is fractionally bigger. Ultimately I cooked with the Cuisinart and am very happy with it, at $50.The Mauviel cost $225 and I sent it back. Wish I could have cooked with both of them, but promised myself that if the Cuisinart didn't work out in a couple of months I'd take the splurge. Price cost it a star but if you can easily afford it go for the Mauviel because it looks so great and is pleasant to handle. Otherwise, the Cusinart is the same thing without the frills and cooks very well indeed.

Mauviel is Skimping
At 2.6 mm thick, this pan feels too lightweight and flimsy for a supposed premium piece. Also, the body of the pan is only 2.75 in. tall, but the handles protrude about an inch above the top of the pan, so it's effectively around 4 inches tall in total. They could have made the body of the pan 3 1/4 in. tall, and 4-liter capacity and it would fit in the exact same cabinet or drawer space if you store it with the lid upside down.Right after this arrived, I returned it and ordered the Demeyere Industry 5 Stainless-Steel, 4-liter Sauté Pan, which is higher capacity but the same total dimensions (because its handles are the same height as the pan), and a full 3 mm thick in 5-ply stainless steel. The Demeyere is normally about the same price as this Mauviel, but W-S had in on super sale for only $99. I feel like I lucked out.

Choose the right size.
Got the 11 incher...it is a tad too big unless you have 4 or more in the household. With the handles it is closer to 14 inches across. The smaller pan would work for 2 to 3 just fine and is a little more manageable. Both pans are well constructed.

Finely Proportioned for Various Cooking Tasks
I had owned one myself and bought another one as a housewarming gift for a friend. The multi-ply construction is comparable to All-Clad's D5, but the performance is even better. Exceptionally even heating and excellent heat retention with all heating sources including induction. Most importantly, the proportions of the Mauviel's pots and pans are superior, better for the various cooking tasks. Depending on wet vs. dry cooking, and the lesser or greater degree of evaporation required over time, you want a deeper pot in proportion to the width, or shallower. A stock pot is at one extreme, and a skillet at the other. Mauviel gets it right every time, while All-Clad's are hit or miss. And you can't beat the beauty of Mauviel.

My favorite pan
I had an older pan with two handles that wore out after 35 years of use. This was my replacement and I'm truly in love. The pan cooks like a dream, distributes temperature well, and is easy to clean. I use it on an electric stove and it works great.

Excellent pan. Maintains the Mauviel standard.
Great pan. Looks great, heats and retains heat well. Heavy. This has a nice easy pour rim unlike many other similar pans. The lid fits well. The only issue, and this is a personal preference, the lid handle is quite small. I cannot lift the lid by the handle without touching the lid. This is true of all Mauviel lids for me -- I have big hands. This compares well with the Viking and Sitram pans I have used that are similar. Very happy with the purchase.
