Q: Does this use the same type plug as a welder?

As there are several types of 240V plugs I can't tell you if your welders plug is the same. You can always make an adapter with material available at a local hardware store.

Q: does this unit have a thermostat to shut of the unit when it gets hot?

No thermostat, it has a knob that regulates how hot you want it to run. Before I shut it of I turn down the heater and blow air across the coil to cool it down a little. It's very basic.

Q: Is this unit approved for cockpit use? the ffa doesn't specify.

I believe it's only for use in the luggage compartment and needs to be run at 10,000k feet or higher.

Q: What is the highest termperature. I need this to kill termites in a cabinet which requires 120 degrees Fh

The temperature control knob is not calibrated in degrees F (or C). So I don't have a definite answer. However, when I put my hand in the airstream, in my personal judgement, the air was in the low 90s. My guess is that you would not get the cabinet up to 120F.
