Q: How does the fiberglass mesh not come out when you cut it?

Rubber like a baking mat, but half as thick.

Q: If using in a loaf pan or cake pan doesn't the food stick to the sides of the pan if you're covering only the bottom?

I use Baker's Joy spray on the sides that aren't covered (I cut mine so it's more like a sling than just fitted at the bottom), and worst case might need to slip a thin knife or silicone spatula between the pan and cake before removal.

Q: This baking mat roll is 0.4mm thick vs baking mat is 0.75mm thick (twice as thick). Both used in baking. What's the advantage of being thinner?

I don't know if there is an advantage. It probably depends on what you are wanting to use it for. I am not using mine for baking but to line my freeze dryer trays and am very happy with it. I may try and use it in my cake pans instead of parchment paper but haven't tried that yet. If I do, I'll update my answer.
