Q: Will this work with a dometic hob and sink combo MO8821?

Check the size of the pre drilled hole on your unit. The cap that holds the tap onto the sink is very narrow on this tap and i have to improvise with a piece of plastic to secure it to the sink so it didnt fall straight down the hole. Looks a little diy but does the job.

Q: Do you have to hold down the switch for water, or is it an on/off switch? I don’t want to stand there waiting to fill up the bowl for example.

No, you don't have to hold it on to get the water. There is a micro switch inside the body to turn the pump on/off.
