Size matters
A knife skills instructor once said "purchase as large of a knife as you are comfortable wielding." With this purchase, I now understand why. If you have a large cutting surface surface to accommodate the 18"/30cm GF-35 and are not intimidated by large knives, I highly recommend it. With a blade of 12" (18" measurement is including handle*), I recommend pairing it a board or block that is a minimum of 12" deep. The length of this knife allows me to let the weight of the knife do the work and makes repetitive slicing and shredding a breeze. I first used it to shred 3 pounds of Brussels sprouts into thin 1/8" slices. The easy rocking motion took much of the effort out of it. I now use it whenever I have a large batch of vegetables to slice. The stainless steel of the Global knives are not the best quality and require regular honing and sharpening. Be prepared to take care of this knife to keep it performing at its best.*This knife is really really long. In a pinch, it would make a very good home defense weapon.

Just What I Was Looking For
After purchasing a 7 piece Global knife set I fell in love with their knives but my G2 Chef's knife (20cm) was not 'cutting it' when it came to larger vegetables. This 27cm knife is large enough and more than capable of handling any cutting job in the kitchen. This knife is exactly what I wanted! It's heavy enough to do most of the work for you but still very light and easily managed. It's also extremely comfortable which was a huge concern as some of Global's smaller knives hurt my hands when cutting tough veg like sweet potatoes. As with all Global products, it comes out of the box razor sharp so be very careful! The product came very quickly and well packaged. I am ecstatic with my newest knife! As a side note, plan ahead for storage. I bought a magnetic knife strip that's been working out very well!

Amazing for professionals or at home cooks
I love this knife! I'm a chef so i use this every day at work. I got my first one 6 years ago and it keeps an edge amazingly well. I don't have to charpen it as often as my other knives and this is my main tool! Do check the blade when you get it because my first one was slightly uneven when cutting. Like they didn't shape the blade when sharpening it. But I was able to send it to global and they fixed it. I got a second one because my mother fell in love with this knife and stole my first one from me.

Awesome slicer, blade too flat
This is an incredibly good knife which I would have been using for everything if the blade was not so very flat. This makes the "rocking motion" harder, and if you chop garlic or so, sometimes the knife has a hard time cutting all the way through - unless you kind of push it down pretty hard. The 10'' version is better that way, though I really like the size of the 12''. If you want to save some $$$, Victorinox has a surprisingly decent 12'' chef's knife, and the blade is nice and curvy. But I can never get that one as sharp as I can the Global knife.

Sharp but hard to sharpen
Very sharp knife!!! Very heavy and super comfortable to work. However global knives in general have a fairly soft meatal and get dull rather quickly. Still global a knifes are amazing. These knives are also hard to sharpen.

Awesome knife!
Absolutely beautiful knife! It was a Christmas gift for my husband and he LOVES it!! He is a professional chef and he uses it all the time at work, especially for butchering anything. His co-workers call it his "sword" and they constantly want to borrow it from him. I also got a GREAT deal on here for this - he had a guy offer him $300 on the spot for it when he was showing it off.

my favorite knife
This is my first professional quality knife but I tried out many before purchasing. Sure the knife is long but it's not like the dimensions are hidden on the page. The edge is wonderfully sharp and combines with the weight to yield an absolute slicing machine. The balance is perfect and, if held correctly (google image search "how to hold a chef's knife"), the handle fits my medium sized hand comfortably. Since buying this about 2 years ago, I added two more Globals to my collection: the G-22 scalloped blade and a GSF-15 parer . I couldn't be happier with my Global knives.

Awesome knife, but I'd like it better if blade had a little more curve to it.
Great knife with a great hand feel, big enough to handle any food prep chopping/slicing job.My only complaint with this knife is I wish the blade had a little bit more curvature to it, so that it "rocked" from tip to heel a little more readily.That said, I am NOT a professional chef and perhaps I just have poor technique? Japanese-style knife with European-style heft and claymore-style length...
I assumed I'd finished slowly building up a set of Globals whilst hoping Someone Else wouldn't notice... then, whilst absent-mindedly doing the sporadic "looking at things I couldn't afford", I glanced with longing at the GF-34. Then I noticed a used one for sale below the... bracing... full price... a used price best described as "my conscience can learn to live with that if I click very quickly without thinking, told nobody, and pretended I couldn't cancel".There's a good reason I longed for one of these monstrous great things and a perfectly good reason why the person probably returned it. I can fully understand opening it and just deciding "So I bought a Global GF-34..." would be the first line in the story of why you have no fingers. On either hand. It's huge, very heavy for a Global, and will happily go straight through a cabbage or cauliflour with little more than its own weight.The big difference between this and the vast majority of the Globals is that it's got the weight and thickness on the spine far closer to the 26cm Wusthof I'd previously been saving for hacking big objects. There's no flex or fragility in this thing, and certainly no forgiveness if you aren't careful with your fingers.It is a big knife and it would certainly pay to try one in person before buying because if you're expecting a giant G2, you're not going to get that. Also, as ever, try a few other brands to see what you prefer as you may well find something else you love.... but I assume if you're looking to drop this kind of money you already know all this. Although I guess you could try it and return it if you don't like it and someone like me might get lucky again.As a mixture of Japanese and European knives I love this thing for how it handles, not to mention the added twinge of nostalgia from years of using relatives's chunky ancient knives that the heft brings back. It is surprisingly easy to weild delicately once you get used to it but can handle some ridiculous jobs with ease. Just be aware that you may need to rethink your storage situation depending on knife-block depth/magnetic strip strength/knife roll length.

Love this knife it's a classic
This is a classic, I went with the 27cm because it feels more solid then the next size down but it's lighter than a comparable knife from another maker.I have been using Global for 20 years and would never go back, well worth the money. The chef knife is usually the first knife someone buys so I might as well tell you that Japanese knives are sharpened at 15 degrees and western knives are sharpened at 20 so make sure you buy the right sharpener.

Excellent knife if you like using huge knives
Excellent knife if you like using huge knives. Like all Global knives, it's razor sharp right out of the box and holds its edge well. Balanced beautifully, but can feel unwieldy if you're not used to such a large blade. Once you get used to the size it excels at all but the most specialised kitchen tasks. This and a bread knife are the only knives I use in my day to day cooking now.

Top quality
This is a top quality tool. It is large in size but it will cut through anything with minimal effort. Perfect for veggie cuts, no matter of hard or soft. Really nice.
