Japanese-style knife with European-style heft and claymore-style length...
I assumed I'd finished slowly building up a set of Globals whilst hoping Someone Else wouldn't notice... then, whilst absent-mindedly doing the sporadic "looking at things I couldn't afford", I glanced with longing at the GF-34. Then I noticed a used one for sale below the... bracing... full price... a used price best described as "my conscience can learn to live with that if I click very quickly without thinking, told nobody, and pretended I couldn't cancel".There's a good reason I longed for one of these monstrous great things and a perfectly good reason why the person probably returned it. I can fully understand opening it and just deciding "So I bought a Global GF-34..." would be the first line in the story of why you have no fingers. On either hand. It's huge, very heavy for a Global, and will happily go straight through a cabbage or cauliflour with little more than its own weight.The big difference between this and the vast majority of the Globals is that it's got the weight and thickness on the spine far closer to the 26cm Wusthof I'd previously been saving for hacking big objects. There's no flex or fragility in this thing, and certainly no forgiveness if you aren't careful with your fingers.It is a big knife and it would certainly pay to try one in person before buying because if you're expecting a giant G2, you're not going to get that. Also, as ever, try a few other brands to see what you prefer as you may well find something else you love.... but I assume if you're looking to drop this kind of money you already know all this. Although I guess you could try it and return it if you don't like it and someone like me might get lucky again.As a mixture of Japanese and European knives I love this thing for how it handles, not to mention the added twinge of nostalgia from years of using relatives's chunky ancient knives that the heft brings back. It is surprisingly easy to weild delicately once you get used to it but can handle some ridiculous jobs with ease. Just be aware that you may need to rethink your storage situation depending on knife-block depth/magnetic strip strength/knife roll length.
