Q: Does the 25lb bag come in a big paper bag or plastic?

Paper bag. I usually Re-bag in manageable amounts using gallon ziplocks.

Q: Does this have Xantham gum already in it, so that it can be substituted straight for regular flour?

I believe it does. I always use this flour just like regular flour hence the name. One cup of this for one cup of the GF flour. It's an excellent product. The chocolate chip cookie recipe on the package is very good also.

Q: Can this be stored in the freezer? Also, how long does it last?

Yes it can be stored in the freezer though it does not need to be. I purchased a 25 lb bag about 4-5 months ago and keep it in the pantry. Even with the humidity of summer it still remains fresh.

Q: Why doesn't this product sheet include the ingredients? I just found out after buying it that it contains milk powder, which I can't eat either...

Well, I understand your frustration and of course the milk powder SHOULD be listed on the "product sheet". Milk powder IS listed on the back of the package and I can't tolerate any milk products either but I don't have a problem with this flour mix. I've put together gluten free mixes myself and there is such a tiny amount of milk powder in a mix, relative to the other ingredients, mostly white and brown rice flours and cornstarch, AND it seems that cooking also helps negate the milk powder, or at least that has been my experience and I certainly would not try to say it would work the same way for you. I will say that I've tried everything else out there I could find, as well as buying all the new cookbooks and making my own mixes and the Cup4Cup beats everything I tried.
