Q: What is the Difference between non ceramic and ceramic

The ceramic coated plate irons are easier to clean and have less friction while ironing the stainless steel plate irons are more like standard irons.

Q: Maybe a dumb question - but what is the cord for if it's cordless? Is this how it charges up? And if so, how long does it need to be plugged in?

The cord is so that the base can heat the iron. It does not "charge" it simply heats the iron when it is set down between pressing items or repositioning the fabric. There are no batteries involved to "charge". On initial start-up, it takes 45 seconds to a minute to heat to high. Once you start ironing it will begin to slowly cool as it transfers heat to the fabric. When you move your fabric and set the iron on the base it reheats to max temperature in 10 seconds or so. It's nothing you really have to pay attention to, just simply return the iron to the base occasionally and it will stay at temperature. here is a video to demonstrate the usage. https://www.youtube.com/watch?v=KODFxCzXyZw
