Q: How long AFTER the "best before " date on the bottom of the box can you safely consume the marzipan? My box is dated 05-01-2014.

I've used marzipan that has been several months past the date on the bottom. It's not so much a safety issue as it is that the marzipan gets harder and more difficult to shape. Hope this helps.

Q: Can this product be rolled out and covered on a home-made Battenburg cake with success?

Yes it can, but depends on the height of the cake whether you would need two rolls or not. Roll out with powder sugar as your destickerfier( what flour would be for a pie crust). One roll can be rolled out to fill a nine inch pie pan. So maybe a one layer cake.

Marzipan is nuts and sugar so if it is going to go bad, it get dry and hard or smell rancid(nut oil). Though I don't know if I have ever smelled rancid marzipan though. Once it is dry and hard it is difficult to work with. I have still made chocolate chip cookies with older marzipan (that is when I opened and didn't use it all at once. My sons love the cookies, and since the marzipan was a little more solid it held together during the mixing and baking parts. It is hard to keep it fresh once you have opened it. I wouldn't worry too much about the date. More so about the softness.
