By far the best skillet I have bought
This skillet exceeded my expectations greatly. It is deep enough to sauté and shallow enough to fry. I have cooked potatoes and eggs that have turned out perfectly. Definitely a win!

Safe, lightweight & totally nonstick
A crack somehow appeared in our glass cooktop overnight and it wouldn't work properly. Thankfully I pulled out a portable induction burner I bought years ago ("just in case") and was able to use it with all my enameled cast iron and stainless steel cookware. However, because all of my ceramic nonstick pans were aluminum based, they did not work. I was looking for an Japanese omlet pan anyway, and liked that this stated that it contained "NO PFOA, NO PTFE, No Cadmium, and No Lead" - since many of the other I saw listed only had stated that they were "PFOA-free", but did not mention anything about being PTFE-free (or cadium-free).Moving on to the pan... Well, it's bigger than I expected. I was looking for a small egg pan for a 1 or 2 omlet. You can easily put 6.. even 8 eggs in this (although it would be a huge rolled omlet!). I did make a 2 egg omlet, but I was only able to pour egg into it twice total. However, if you want to make a 4 egg omlet to share (or if you have a hungry man appetite), this is the best size for you. I've only used it twice so far - yesterday for a 2 egg omlet with cheese inside; and today I made a banana omlet with 2 eggs (I had bananas that desperately needed to be used). With the addition of the banana and some milk, it made enough batter to be able to roll it 4 times. Nothing stuck with a minimum amount of oil, and because I wanted to keep this in new condition, I only use a wet kitchen washcloth with soap to wash it... if you can call it washing. I just needed to touch the cloth and everything basically washed away on its own. The one other thing I wish would be different is for the round metal plate that's on the bottom of the pan (for the induction capability) be made more square-ish. As you can see in the photo, the edges of the eggs are cooked lighter than the center. It's definitely not a deal-breaker, because regardless of the shape of the disk, the eggs were still thoroughly and evenly cooked. I'm keeping this pan, but if they come out with one half the size, I'm getting that one too.

My Favorite Skillet
Originally bought the TECHEF - CeraTerra Ceramic Nonstick Tamagoyaki Japanese Omelette Pan to make rolled omelets. I now use this skillet for anything that will fit in it.It heats so evenly it puts our really expensive pans to shame.Works excellent on my gas stove as well as my hot plate.Ultra smooth finish, nothing sticks, cleans so easy. Has never discolored.I use my TECHEF - CeraTerra Ceramic Nonstick Tamagoyaki Japanese Omelette Pan between 5-15 times per week! It’s great for whole meals or with the easy clean up, to make custom egg orders for our three person household.It really is my favorite skillet!

A great addition to my cookware
This square pan makes it so easy for me to cook an egg roll. 3 eggs + chopped 1/2 onion & carrot. Voila! So easy to clean! Light weight of a great quality! Far superior to Chinese knockoffs.

Pan is sturdy and surface is extremey stick resistant.
What I like about it:1) Extremely slippery surface. I have even browned up sea scallops in butter and not even the teensiest bit of anything stuck to pan.2) The shape has squared corners and straight sides. The main reason I like this that pretty much all spatulas have straight edges and so can be awkward to get under food which is near an edge. That isn't the case with a straight edge pan like this. It makes getting under food easy, even when it is up to the edge of the pan. Things like eggs are much easier to handle without mangling them.3) Super easy to clean. Because it is so slippery, the pan is practically clean before you take it off the range. No scrubbing is ever required. Just gentile washing and rinsing is all you have to do.4) The edge opposite the handle is angled out a bit from the pure vertical. This makes it easy to "dump" the pan contents. This gives you a fast and easy alternative to picking the food up and out if you wish.5) Even though the base metal is aluminum, it incorporates a steel pad to make it induction capable.There are also some things I'm not as thrilled about. There aren't any show stoppers but are at least mildly disappointing:1) It is sold as having a non stick surface provided by a ceramic coating, yet uses PTFE (Teflon)? For myself, and I'm sure many others, the point of going with ceramic is to achieve non stick properties while still being safe to use at higher heat levels. Because this does have PTFE, I limit its use to heat of medium or lower. There is still a lot you can do in that heat range, but still it would be best to not be limited.2) The way the steel induction pad is incorporated into the pan causes there to be a slight raised area in the center of the cooking surface rather than a completely flat surface. It is not much and can be easy to miss with casual observation, but if you have only a small amount of butter or oil in the pan, it will tend to migrate to the perimeter and away from the center of the pan. The very best design of including heat spreaders and/or induction plates is having them sandwiched within layers of base metal, so that both the range contacting surface and the cooking surface are completely flat. That is more expensive to manufacture though, and I didn't happen to run across such a beast here on Amazon when I was browsing the offerings.Like I said, those aren't huge issues, and I still would buy & use this pan if I had it to do over again. I do want to mention these experiences though to potentially help others if it would be more of a concern to them.

AS DESCRIBED
This looks like a good quality 8" pan that is built well. I like the fact that it can be transferred from stovetop to oven because of the metal handle.This frying Pan DOES NOT contain TEFLON - PTFE as the earlier reviewer said it did. The packaging clearly shows this to be the case as per the images I took of the pan on arrival.Happy cooking.Note: I will update my review if I find any issues frying with this pan.

Good non stick pan, not the best for induction
I was looking for a decent non stick pan that is induction ready. The pan performs as promised if you are looking for a decent valued pan, however when it comes to induction cooking performance relies on the overall construction. The best pans will be made entirely of magnetic materials allowing the whole pan to heat evenly and efficiently. Lower quality construction will use a magnetic base instead of the whole pan.(This pan uses a magnetic base only) The result is that you must turn your induction stove to a higher temperature setting and sometimes your cooktop may not recognize the pan because the magnetic feedback is insufficient to tell the cooktop that there is a pan on the burner.Overall the pan performs as expected for the price, but if you are looking for maximum performance than I would try to find a pan where the entire construction is magnetic.

NOT NON-STICK
The pan works fine at first and at very low temperatures. I fried some sausages at medium/high (3/4 on my induction cook top) and they stuck. The picture is after 2 cycles in the dishwasher.Not a "non-stick" pan!

Really non-stick!!
Waited to review until I'd used it enough to ensure it lived up to its claim of being non-stick. Very satisfied with all my frying endeavours with this pan.
