Q: Will they work on metal water tanks?

I really don't think they would work in a metal tank. They work on a small electrical charge that is carried through water (conductivity) from probe to probe. If you have a metal tank it would absorb the current and give you false readings.

Q: Does this work with any type of plastic tank?

Yes it should as long as you follow th firections and drill the correct size hole. It tightens from the outside with the rubber gasket compressing to seal the opening. It was very easy to install, and I have only "average" mechanical skills.

Q: how many probes come with this order? fresh water requires 4

Only one. You will have to order three should you have three current probe sensors. Easy installation.

Q: If they need cleaning, do they come out easily and can be re-used? (I installed Horst - failed after a few months and come apart when extracting)

they are not made to remove and replace. You need new ones if removed. clean tank with pressure wand.
